Recipe: sharlotka

Lately, my parents have been especially health conscious so for father's day a few weeks back I made dad bibimbap and sharlotka with an adapted recipe. There was a story about the sharlotka. Dad befriended an elderly couple who live on acreage and being quite generous, they gave us a huge box of fresh apples from their harvest.

Normally we're not huge apple consumers but that period of time we ended up eating apples non-stop. Apple and meat stew, apple sauce, apple strudel, apple juice, sharlotka etc.  Anyways, here's the recipe below.



Ingredients (serves 6-8)

  • 4 large/6 small Granny Smith apples (we chose Red Delicious to use up supplies)
  • 3 large eggs
  • A pinch of baking powder
  • 3/4 cup brown sugar
  • 1 1/3 cup all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Powdered sugar for the finish (optional)

Instructions

  1. Pre-heat the oven to 180 degrees celcius
  2. Line a 9 inch springform caketin with baking paper/grease (I find baking paper more effective for this recipe)
  3. Peel and core apples, dice them into little chunks
  4. Whisk the eggs
  5. Add the sugar, then cinnamon, flour, baking soda and vanilla extract. Expect a thick batter
  6. Place the apples in the tin
  7. Pour the batter over it. It may look a little unusual with more apples than batter, but this apple cake's texture is more closely related to a bread pudding than anything.
  8. Bake for 50 minutes fanforce. Adjust accordingly.
  9. Cool in the tin for 10minutes. Sprinkle with icing sugar.
  10. Serve warm or cool, with or without a dollop of sour/barely sweetened cream.
